“We do this to raise the level of awareness. I can choose to go to the farmers market,” says Brett Martin, Senior General Manager.

“I can also do it here by virtue of my position at Bon Appetit. I can choose to buy from local farmers. But wouldn’t it be great if we could influence the choices of the students?”

Bon Appetit makes choices every day that helps them be more environmentally sustainable and supportive of local agriculture. Company officials at Redlands use to-go boxes made out of cornstarch and biodegradable plates, purchase their milk from a local dairy and regularly use many local farms.
